Many of the finest oolongs are cultivated from the high elevations of Taiwan as well as the Guangdong and Fujian Provinces of China. They are partially oxidized teas (from 8 to 80 percent) and the leaves are subject to a highly skilled, repeated process of withering, fermenting, kneading, twisting and firing.
