We will explore every facet of these teas and how their stonefruit, wildflower, and honey profiles transform and accumulate during multiple rounds of steeping.
In this focused session we invite our guests to explore the delicate, narrative subtlety of tea cultivars through hand rolled, oxidized, and meticulously cared for Phoenix Oolong. This session will feature 3 exemplary Feng Huang Dan Cong, or phoenix, Oolong offerings from Guangdong, China. We will explore the facets of these teas and how their stonefruit, wildflower, and honey profiles transform and accumulate during multiple rounds of steeping. Dan Cong Oolongs hold some of the most subtle and graceful flavor profiles in the tea world, in a setting that allows each varietal of these wild grown leaves to speak, we will build a palette of these teas allowing their profiles to create an expansive experience. Beginning with Phoenix oolongs that lightly whisper gently tannic strains in the upper register of the palette we will move through to more full bodied teas and round out to comfortable, woodsy, and stonefruit inflected Phoneix teas. Phoenix oolong teas are sometimes named after the flowers that farmers in the Fenghuang region of China associate with their aroma. After a few steepings we will introduce one of these teas which will add another layer of ornament and delicious finesse, like a dessert tea, to the overall picture.
