Elegant and quenching with constructive tannins, it makes for a memorable infusion.

This elegant organic, dan cong (phoenix), wu long tea translates to “Yellow Gardenia Fragrance”.  With a complex profile, this unique and rare varietal is illustrative of its namesake, lightly roasted with notes of stonefruit and citrus and a wild-flower nectar finish. Elegant and quenching with constructive tannins, it makes for a memorable infusion. 

The leaves are harvested by hand in April, sun dried, left to rest, shaken and this process is repeated six times. Then they are stir-fried, upon which then they are twisted and kneaded, re-fermented twice, and fired twice. Finally the leaves are oxidized to 30% and roasted repeatedly until the sweet, honey and floral aroma is brought forth. It is known as “Nong Xiang” style. The floral, fruity, and deeply aromatic character of these teas makes them highly desirable. 

We source this tea from a small, self-owned garden in Guangdong, China an area famous for it’s spectacular Feng Huang Dan Cong (Phoenix) oolong. Their estate is organic, and visited by wild elephants on occasion, which only adds to the allure.

    • 2 tsp per 8oz/250ml of water 
    • 195ºF/90ºC (Bring fresh, cold spring water to a boil. Remove from heat, set aside for 1 minute, and proceed.) 
    • Brew 4-6 minutes
    • Good for 2 infusions
